Spicy Pickled Carrots



My favorite nephew texted me the other day asking me if I could make some spicy pickled carrots. They are his favorites. I thought I had more carrots so I'll need to buy more so I can make 6 more jars. They will be ready to eat in a month or so.

Here is the recipe if anyone is interested

Spicy Pickled Carrots

Bring to boil 2 cups vinegar
6 cups water
½ cup pickling salt also called coarse salt

Put in each jar
a couple pieces of garlic clove
couple rings of jalepeno peppers
 pinch of red pepper flakes
piece of fresh  dill weed
Recipe calls to add a pinch of alum. I looked in several stores but I couldn't find any. Don't think it will make much of a difference.
Now add mini carrots ( 1 bag) to jars
Recipe makes enough for 6 (500ml) jars


Add hot liquid to each jar and wait 1 month or more before eating them.
